Craving Chinese takeout but want to keep it clean?
If you’re working on increasing your protein intake and finding quick, healthy meals then this is the perfect recipe for you to try. This Egg Roll Bowl hits the spot with all the flavors of a classic egg roll… but without the deep frying. Plus, it’s super customizable. Here’s your recipe (makes 4 servings)👇 Ingredients: ✔️ 2 tbsp sesame or coconut oil ✔️ 3 cloves of minced garlic ✔️ ½ cup diced onion ✔️ 2-3 tbsp of diced fresh ginger ✔️ 1 pound ground chicken or turkey ✔️ Salt and pepper ✔️ 1 tbsp of sriracha or hot sauce ✔️ 14-oz bag of your favorite coleslaw mix (rainbow slaw works great!) ✔️ 3 tbsp of gluten-free soy sauce or coconut aminos ✔️ 1 tbsp of vinegar (I use apple cider vinegar, but rice vinegar is more authentic) ✔️ Optional garnish: toasted sesame seeds Instructions: ✅ Heat the oil in a large skillet over medium-high heat. Sauté the garlic and onion until the onion is soft. ✅ Add the ginger and sauté for 1-2 minutes until fragrant. ✅ Stir in the ground chicken, a pinch of salt and pepper, and hot sauce. Cook until the chicken is done. ✅ Add in the coleslaw mix, soy sauce (or coconut aminos), and vinegar. Cook until the slaw is tender. ✅ Sprinkle with toasted sesame seeds if you like, and serve! It’s the small wins—the short walk, the extra glass of water, the effort to get to bed 30 minutes earlier—that build the momentum you need to keep going. All those small “yesses” add up. But what if for the next 30 days, you… 👉 Made sleep a non-negotiable priority, aiming for 7-9 hours every night. 👉 Took 15 minutes each morning for yourself – to meditate, journal, or just breathe and enjoy your coffee in peace. 👉 Prepared a few healthy, make-ahead meals instead of grabbing quick, processed options. It doesn’t sound like much, but if you start there and stay consistent, you WILL notice a difference in how you feel. This is something that I am really working on this year because I know that it will allow me to show up as my best self for the people that I love. So, even on my busiest days, I am setting aside time for myself, whether it’s for movement, rest, or just reflection.
