Nutrition is such an important piece of getting great results in a health & fitness program, as well as staying healthy in general, and there is so much information out there that it can be hard to know what to do! We know that we only have one chance to prove to people that eating healthy can taste DELICIOUS! So our Healthful Living Guidebook contains all of our favorite recipes, and I have to admit that there are a few that are my ALL TIME favorites in there! This weekend I cooked up a pot of the Oh So Good! Chili with a Twist. Man, is it delicious! The ingredient list took me by surprise the first time with things like pumpkin puree and cacao, but I'll tell ya, those flavors really contribute to a helluva great chili! ProTip: I LOVE using whole milk greek yogurt as an alternative to sour cream. And, I recently discovered Hope Organic Guacamole. I used a little of both to spice up my chili and get my probiotics and healthy avocado fat in at the same time! YUM! My husband is a picky eater. He knows that he needs to eat better, but he's the first to sneak a bag of fried chicken from the Hannaford deli into the house. So I consider him to be the ultimate test when it comes to the legitimate yumminess of a healthy recipe. The other thing about my husband is that when ever I make chili or pea soup he immediately requests corn bread, and this weekend was no exception! As soon as he saw chili on my meal plan for the week he made the request - Corn bread please! Another confession for you today - I always made corn bread with the good ol' Quaker Cornmeal and corresponding recipe on the side of the container. I never thought much of it and felt like it was "the way" to make it just as my mother had when I was a kid. It seemed to me to be an "old fashioned" recipe and must be good. I don't know what I was thinking! I've done my share of reading on nutrition and about a year ago I dove into a book by Dee McCaffrey called The Science of Skinny. In this book she gets into all of the science around why refined sugar, flour and fats (like crisco) are so bad for you. While in the midst of that book my husband made his standard plea for cornbread, so out came the Quaker cornmeal and I set to work. This was the first time that I realized just how terrible the ingredients were. First of all I was SHOCKED by the list of ingredients in my cornmeal! All kinds of chemicals I could hardly pronounce (and I have a science background!), and the recipe itself consisted of white sugar, white flour and crisco. Oh my! So, I set off to find a more wholesome cornbread recipe that was made with REAL whole food ingredients but still tasted like the corn bread that my mother, and my husband's mother, once made. Well people! I am happy to tell you that this weekend I FOUND IT! And I want to share it with you. This corn bread is made with sprouted flour, whole corn meal, honey and other whole food ingredients just as mother nature intended. Here it is! There is nothing better than a hot bowl of chili and a warm, buttery piece of corn bread on a cold winter's night. And this corn bread along with our Oh So Good! Chili with a Twist is a WINNING Combination! Don't be afraid to adapt your recipes to more wholesome ingredients. Mother Nature is very smart. She carefully packages our food just the way our bodies want it, with the perfect balance of nutrients.
