These are my most favorite texts to get. Mike makes the very best meatballs! We like to make a big batch - we eat them one night with banza pasta, then we will heat them up and put them on salads the rest of the week - or lets be honest, eat them cold straight out of the container.
Here is his recipe… be sure to save this for later - it's a winner!
(makes 16 meatballs – 3 to 4 servings)
Preheat your oven to 400ºF/200ºC. Prepare a baking sheet by lining it with parchment paper or coating it with 1 Tbsp of olive oil. Set aside.
In a large bowl, stir together the onion, bell pepper, almond flour, garlic powder, and salt. Add the turkey or chicken, and coconut aminos, and stir again until all the ingredients are combined.
Form into 16 meatballs and place on the prepared baking sheet. Place in the oven and bake for 20 minutes, or until golden brown and cooked through.
